A: the fight is long and the enemy eventually lands a hit on you.
B: you have just bad luck, which i dont hope/think will kill you instantly...maybe when you see the red maps with some hefty mods but I dunno.

2 leagues ago I managed to level a pure evasion 2H melee character to 97. And I'm far from a great player but doing maps feels awesome with evasion + acro and phase acro + wind dancer/Kintsugi makes you defensive versus most things in the game.

there are so many ways to get mitigation now-a-days that there really isn't any reason to start stacking evasion/dodge/block on top of it for just more layers. thus, characters that already have such huge evasion/dodge or block can invest in those mitigation layers (much more consistent than pure armor) and be so extremely tanky.
from endurance charges and its many ways of stacking them now, kintsugi, wind dancer, hardened scars, fortify, guard skills, % phys taken as xxx, etc etc.

I don't recall it being about "any" hit, but the really hard hitting stuff.

nah - people have this false idea that any evasion build gets hit once and explodes.
but if people are just talking about the "really hard hitting stuff", that ends up killing nearly anyone anyway - depending what we're talking about.

I would say its more along the lines of things like heavy physical where its the mitigation from armor can allow one to survive a spike but the evasion/dodge is constantly at high health and then bam! Avoidance makes it harder to gauge the damage being taken because you don't see it until it finally hits and by that time it may be too late.

at a certain point its all about the currency you are able to spend I guess and efficacy wise other builds simply do better

The problem with those is they all benefit armour more, as the smaller the hit the more effective armour gets and the guard skills aren't really setup to support evade - they are either armour based like molten shell or preemptive like steelskin.
Your point isn't wrong at all though you can ensure your evade character won't be one shot by physical damage if you aren't actually asleep when you build the character, the real thing forcing evade down atm IMO is that dex is trash compared to strength, 7-8k life vs 5.5-6.5 is really quite a big difference when it comes down to it.
If your average raider had the same life as your average champ or jugg I think we'd see evade reasonably represented.
