I found going cold turkey to be the best way of giving up the ALT lifestyle.That and giving your complete stash away to strangers will set you free. =P
Set new goals you want to achieve.

Set a goal like "I want to achieve level 85 with a character" or "I want to clear a level 78 maps" or "I want to kill Atziri" or something like it and have a realistic take. Don't try to kill Atziri with some a bad build :)

I'm an altoholic, and I love it.

I get to play more of this game than grind. I get to experiment with skills, play styles, and come up with interesting and stupid builds.

I do have two 80+ characters. Most everything else I stop around 70ish. I would suggest not selling everything off to make your new character, but rather take everything you've learned from your previous characters to make a build you would enjoy going 80+ and start it fresh, and use only what you wouldn't use for another build to pay for it so when you want to go play an alt to mix it up for an hour or two, or day or two, you still can do that.

The main key is to make the build yourself. I'm never happy with a build I don't make myself. I may use information I learned from other builds, but I never want to copy someone else. Both my level 80+ characters are uniquely my builds and they are both exceptional in their own way. One has much higher defense but is more prone to dying to reflect if I don't pay attention, while the other has good defense, but doesn't have the defenses I'd like for it, but one shots so much stuff that I even one shot Kole a good 42% of the time (on a crit).

My best advice is exactly that, make and refine your own build.
