Yes, the Polycount in PoE is way to high. So much stuff that can be optimized ( I do some 3D gfx stuff as hobby from time to time and optimizing these is some kind of "sport" ^^ ). PoE has pretty complex graphics if you compare it for instance with Diablo 3. Even if D3 may look also pretty "3D-ish", it has a ton of (dirty) tricks and optimizations that increase performance and reduce the polycount. While PoE has lot's of "massive" 3D objects (even small stuff like fence bars or table/chair legs), D3 fakes a surprisingly big ammount of graphics with "2.5D" stuff and low Polycount models. That's why it runs with max res and max settings fluid on my PC, even in heaviest fights, while I have to lower res and details in PoE to get even half decent performance in average situations.
So there is much room for improvements in PoE, environment (do PoE environment objects have full rendered backsides for instance?) and how high is the polycount of the 3D Models.
Problem is, like mentioned before, the corpses are needed for various skills, my summoner Witch lives from these. But there could be ways to improve this "corpse behaviour" in various ways, like replacing them with simple 2D "Sprites" that don't cost much Performance or let them slowly vanish when a certain naumber is on screen (not all, so that you still have enough left for your summoning or corpse explosions). Same for all these little blood and gut pieces, every bit costs performance.

I forget, is it possible to zoom the camera in in Diablo 3 and does it alter the angle of the camera while doing so like it does in POE? If not then yeah that would explain how they manage to get away with using 2D objects that look 3D'ish since it's impossible to position the camera in a way that breaks the illusion.

The camera angle in D3 changes similar to the angle in PoE when zooming but D3 only has 2 zoom options (close or far). But you don't notice the 2D stuff when zooming, the angle change is not that big to discover the "cheating". I guess they also implemented some kind of "parallax" effect to the 2D stuff to adjust the perspective and keep up with the different angle when zooming in, you can test this if you have D3, it's pretty interesting actualy (if you are into 3D graphics'n stuff). The trees in D3 are actualy "2.5D" (different 2D layers mixed together), but well made and it all blends perfectly into the rest of the graphics. I guess one of the advantages of the more comic look of D3 is that you don't need that much detail on graphics and so the tricks are not that easily discovered.
PoE of course has a different style, it may not be that easy to combine 3D and 2D level elements unlike in D3.

However, D3 and PoE never change the camera viewing perspective so I guess you can do some tricks in PoE that would not be possible in a free-camera 3D game like Sacred 2 for instance (which also runs ways better on my PC than PoE by the way ;) )

1) Bodies as implemented suck. Especially gore. They eat FPS for no reason.
2) Vaal isn't intended to take 30 minutes.
3) That doesn't stop people from taking 20-30 minutes if they're being careful about the fight. 10k damage kills you.

All of those are valid. You people chewing the OP out for taking forever to kill vaal don't know what the OP is trying to say. He's saying corpses are needlessly FPS intensive. Players shouldn't need a dedicated gaming machine to do Coward's Trial, but it's at the point where they pretty much do need one.

For reference, I have a rig that would blow away 99% of the computers on this forum (780 gtx, i7, 16 gigs of ram, SSD) and I STILL occasionally get lag. The game is not optimized, so it will affect you to an extent at some point. I can only imagine how bad it is for some people with lower end computers, even with settings turned down.
