Why is shit tier map farming more rewarding than red tier map farming.

The ultimate goal is to level up and that requires red maps.

Where are you getting that idea from?
Because lvl 100 is simply the max?
Do you need it?
What does lvl 100 give you actually?
Is it something important in PoE? In other games it is.

So I assume they farm the low maps to eventually gear up and farm red maps which also give xp. If not, what is the point of doing the same low maps over and over for just currency that you never need/use whilst also not progressing in levels?

For some... you're assuming right, but not for all people farming it.
It entirely depends on your personal goal.

Do you want to kill uber-elder? Well, if you're not experienced you might need a fairly decent build, then the farming is definitely the way to go. True there.

What to do afterwards though?

Making interesting builds? Sure, this is also another reason, trying out new stuff along the line.

Making a specific item? Well, then also low-tier farming is the option this league, though you'll never even take a look at xp or higher content starting here.

Then it's collecting currency, collecting items, simply playing for fun, playing to waste time... so many options available.

For me? I do T2 Glacier to buy myself a HH this league to run 5-way Emblems... to get profit + jewels myself for Standard. Will I do anything important with them? Probably not... but I'm someone who collects a lot, so the majority of my currency will go into crafting after the league as well as interesting items being stored for possible future characters. T16 won't see me again the next months, lvl 94... well 95 tomorrow since I only need 5% and even T2 will get me that... is absolutely fine as well, couldn't care less about lvl 100.
GGG balance is like getting a pizza which is burnt on the sides, raw in the middle and misses the most of the toppings.
Then upon sending it back you get a raw side, burnt middle and enough toppings to drench everything in grease.
Everything fixed but still broken.
Point is they farm T2 to eventually do something else. If the goal is only to play T2 maps which anyone can do with a shit build then it's not much of a goal.

Yes it feels like a paradox of some sort.
