How to get used to playing Softcore?

Well, shaper but not uber elder.

I was following a build guide though, which to me kinda feels like play by numbers, if you know what I mean.

Uber Elder is probably a good goal for next league, you are right.
I was in the same situation. What I did was I went into it slowly. I started playing standard in between leagues. Then a little bit during leagues, taking big breaks in between. I did that until I got used to it.

Til now I try not the die as if it's HC, and to be honest, I get more salty when I do because I realize I'm a scrub and the death means nothing.

Nowadys, in the pure breach stone era, it only takes 4h to get from lvl 1 to 100.
You do realize once Betrayal goes core getting that enough encounters to reliably get Pure Breachstones might be harder? Also not everybody can afford Breachstone Rotations so my point still stands.

In a dedicated boosting group, with only chayula stones :P

It takes around twice as long with a dedicated group and elemental stones, and it takes around 5x as long if you have to actually join rotations--and that's after you've already purchased the stones.

And it costs an insame amount of currency. Nevertheless, I still think it's an achievement. I was always under the impression that with too big a level difference and hence xp punishment you can't really pull it of in a fast way - I was wrong.
I mean, you do realize that in addition to being monster level 84, chayula's pure realm also has the explicit mod "350% increased experience gain", right? It was clearly made for fast leveling. Your post reads very confusingly--it's not like this was always possible and suddenly people figured out how to do it, it's that GGG introduced new items specifically for speed leveling. There's nothing you "were wrong" about, the game simply changed.
