Chaos is a very basic currency utilized a lot. It is quite easily farm-able but also utilized a lot in the end-game so as a standardized currency it functions pretty good.

Might want to give the PoE-wiki/currency page a go to get more familiar with the different currency's.

In therms of rarity

lowest : transmutes/alterations/augments all scraps

medium : alchemy/chaos/regal/scour/regret/fusings/jewels

high tier : exalts and mirrors

At least to me that's the basis from which i operate.

Telling you currency ratio's would be meaningless since this shifts around constantly. You will learn this by participating in the trade system though, be prepared to make some bad deals and fuck up a bit and learn from those mistakes :).

I'm starting to really get into the game and get pretty addicted so I'd like to know as much as I can... if there's anything I should read up on, could you let me know :)
If you really need the gem, I agree that buying it is faster. But Vaal areas are fun and can have nice loot, so:

Another great place is Mud Flats. You can farm for Vaal areas just by running up and down the coast.
Two types can spawn there: Sunken Shingle, which has a small pier leading away from the beach and the Strange Sinkhole which typically appears between the coastline and the entrance to the Submerged Passage.

The Archives are also great since it's such a small zone. The one to appear there is the Restricted Gallery. This will become interesting later if you want the other type of items from Vaal areas - fragments - since the rarest, Sacrifice at Midnight, only drops in lvl 60+ areas.

It's also worth noting that Vaal areas don't spawn anymore in areas before towns (e.g. City of Sarn) - they were too easy to farm :-D
