I think if players are going to enable it in the options they will want all the info.

It's likely to be sufficient if you simply show Max HP and then use the standard "red bar of depleting health".

No one during a boss fight should be looking at 459/500 health and try to be making a gameplay decision based on in that value is 459/500 or 458/500.

Most players will be curious "how much health [meaning, max HP] does this mob have?" And they "red bar of depleting health" gives the player the ability to immediately gauge "roughly how dead is this mob" (e.g. below 50%, almost dead, etc...)

I really think that showing it should be a personal option considering everyone likes to play a little bit different and it can't hurt to give them the option.
I believe that many gamers like to have as many simple decisions as possible and this would be a pretty simple decision which gives the gamers a choice of gaming style which would actually be shown.

I prefer exact resource displays to be disabled by default, but having the option to enable them is the most accessible solution. Disabled health displays increase the level of estimation required by the player, and I find that it increases my level of engagement. Also, I find it annoying when I know the exact, stupidly high hit point totals of bosses; I understand that they have a lot of hit points, but I don't want to stare the ridiculous number if the face. As purepower said, the red depleting health bar is more than enough.

I think it should not be shown.
Maybe to invent some kind of bestiary(for each player or league).
And you update the bestiary with something you get from monsters (Example: Skeleton drops item called Skeleton card. You can use it to fill ur bestiary with that monster which shows his health, damage , etc.)

It may be God calling.
It is nice when you see how much damage you deal by hit and how much life you gain by heal etc.
This is very well done in a certain successfull free-to-play game based on dota.
