Monster Crit Chance / Multiplier.

This is apparently something that they MIGHT want to keep secret, but lets see if we can get one of them to spill the beans.

I'd like to know this as well.

I think it's like, if moster deals 100 dmg and crits it deals 150. With the 2 passives, it would do 120.
In addition, I'd like to know how much of and increase does a rare enemy get to crit chance and crit dmg when it has "Increased critical strike chance and damage".
You also have to consider that some magic/rare mobs have increased crit chance/mult. By how much, who knows?
Please, it's not only about npc crit stats.
This is really bad at high levels and remember: monster don't lose exp, WE DO and it's not fun to die because of "surprises". NERF MONSTER CRIT DAMAGE!!!
My guess is that the reduced critical damage works like this:

Monster has 100 base damage and 1.5 crit multiplier. This will equal 50 extra damage from the critical hit. Without the passives the total damage would be 100 + 50 = 150. With both passives the damage would be 100 + 50 * 0.7 = 135.

The reason why I think it works like this is because the description on the passive says: "You take 15% reduced Extra Damage from Critical Strikes". Notice the word "Extra", this probably means the extra 50 damage that you would take in this case.

Of course this is just my guess, it would probably be easier to become a rocket scientist than learning all of PoEs mechanics, lol.

I doubt it works like that, it would be way to imbalanced. For two points you would almost turn most crits into normal attacks.
This is not an appropriate thing to keep secret. There are two passives in the heavily traveled Marauder starting area that grant a reduction. How can we evaluate these passives without knowing this answer? Frankly, I'm amazed that no one has ever asked this before!

Apparently monster statistics is something the GGG devs like to keep secret for some odd reason. There is no information anywhere about monster damage/life/resistances/etc that I can find.

I honestly cannot, for the life of me, imagine why GGG would be so hush hush about these things, other than the ability for them to say "Ha ha, we know something that you don't". For every other ARPG imagineable (yes, even a 10+ year old game like D2), you can find detailed monster stastics on the wiki, or some even on the official site itself. Knowing monster statistics doesn't really give players any unfair advantage at all, and I really hope GGG can be more open about the numbers behind this game.
