For future reference, that is the way of telling. All curses that are applying to an enemy will display their visuals. If there's only one curse symbol, there's only once curse applying.

but does increasing my player curse limit, allow my spectres to apply additional curses?

IIRC, if one of the curses is cast by yourself, be it self cast, triggered or CwdT... then yes, you will be able to apply two curses on monsters.
It's been some time I play with Spectre's curses, so not sure now if you need a +1 curse limit for yourself in order to have both curses applied, yours and your spectres.
