Which pantheon powers should i get?

flexible, but my personal preference:
Soul of Solaris, take no extra damage from crits if you have taken a crit recently = mini-brass dome
Soul of Shakari, immune to poison, since we're low life and not CI

Noob here, is there any reason why summon ice golem is connected to cast on damage taken? I assume we want one out all the time?

Cwdt at level 1 with an appropriately low level golem is just easier gameplay.
Having it up all the time is not a build enabler. It’s pretty much a free crit chance buff. You have so much dps that the 1% difference in crit is neglible. Try to reach 40% crit chance to effectively deal with porcupines.
