I think "god" is Chris because he gathered all team and made that game existing. Gods are programmers that shaped Wreaclast gave it all its core but dropped - now after Beast was slain - i guess some programmers manager was dropped - some of those ppl came back to team in new much more powerfull forms - hence gods. So now they fight with us - community - about expansions, leagues, mechanics, etc.
Thats my theory and i will go with it.
Also Dominus knew that his world is an illusion - made by gggods.

Depends on the context as different cultures had different gods, but most likely it refers to Innocence.
What happened is that when FOO was released many new gods, including Sin and Innocence, were introduced, and it was retconned that Innocence was the god of the Templars. However, many things in the game have not been updated to match, such as the character voice lines in Acts 1-4, the masters dialog, etc.
