If you cant cap your leech against single target, it means that either your DPS or your "%damage leeched as life" suck, or you dont leech from damage you deal (cause you deal mostly elemental damage). Maybe, you think that having mere 1-2% life leeched per second (total) is enough? Nope, it isnt, you should invest into life leech passives and stack life leech from gear (notably amulet).
Also, life leech lasting for mere 2 seconds dont utilize full potential of Endless Hunger. One should have 5-10 second duration for it to feel full benefit.

Ok my previous statement wasn't really properly said.

What I meant to say is that :

1) Increased leech rate reduces number of hits you need to do in order to cap leech rate
2) By increasing attack speed we cap our leech faster
3) By capping leech faster we reduce chances of getting killed until we get to our leech cap
4) There is a max amount of life that each leech instance can heal

So with slow big hits your instances last longer but you have a period of leech buildup which is longer than with faster hits, this is a benefit for mapping and monster packs but versus a boss this can be quite a big difference, in my opinion it is better to cap leech instances in 1 seconds and have them last for a shorter time than to have few long leech instances but take 2 seconds to cap leech.

It is a matter of preference mate, depends on what you value more.

It is also not realistic to have instances lasting 5-10 seconds when your average damage per hit isn't ever going to be high enough to achieve that (you would need a 20k average hit in order to have a 10 second leech instance with 6% life leech).
