How much actual DPS does Iron Grip add? Is it worth going for?

Also - I am pretty low and can't hit the Dex to use a good agility skill gem / bow. Do I just wait to find a good ammy/ring with dex, or head towards a big dex node / cluster?

That's just to have both supported by AFD (added fire damage) simultaneously. You want two, to be able to burst them out quickly. You could use different items to support them, even with more stuff then. But this way, both are supported by AFD and you made efficient use of your sockets.

What totem should I be using? I'm not 100% sure how totems work together with support gems etc. Can someone tell me some good totem combination?
