Would Doryani's Catalyst be good weapon for this build?

Yes. I have been told Doryani's is a great weapon for the build.
The issue with using the Doryani's instead of the Soul Taker is that you don't have the Soul Takers Ability to use attacks without having enough mana. So you will either need to spend a gem slot on blood magic, OR NOT reserve 99% of mana on auras, and work on the mana regen/leech issue.

I hate mana, so with the soul taker, I just have to worry about how fast i can attack, and not have my DPS limited by my mana pool. There is nothing to stop me from getting 10,000% more attack speed and be doing 23 attacks per second. As long as I have the attack speed, I can attack without boundaries.

I would affirm, the use of soul taker best option. I personally hate the mana starvation.
