The fact that you're comparing PoE to poker speaks for itself.
I don't know poker very well but I know that there are different types of poker.

For example the type of poker where cards that players can use to "craft" with (so to speak) are open in the middle of the table.
These cards will turn open one card each turn and so you can see your chances increasing or decreasing and decide if you still want to be in or not

A funny side note, but I think that PoE should work more like that (less randomness, more guarantees)
