Pet as pickup for currency & shards

Will it be possible to have your pet, if you use one, to pick up a select # of items, but only currency and currency shards? Or anything 1x1 slot wise

Yes it is! Go to China and play on their p2w servers. They have a monthly subscription plan to do just that. Tencent is in complete control of the Chinese servers, and they do not interact with the rest of the world's servers. It's hardly the same game, but gotta make the boss happy.
