I think the game is intended for you to learn the mechanics of a boss and avoid those. They added the dodge roll for that purpose. So, like it or not, I think these one-shot mechanics are here to stay. The best you can do is to try and learn the wind-ups so you can move out of the way when they happen.

For bosses, these are fairly predictable in terms of what each wind-up does.
