Actually I just managed to do it, but it's not in POE but in DS4Windows (3.3.3 on my side):
- Go to your controller or profile, click on Edit
- On the display of the controller, click on the Share button
- It opens a kind of huge rebind screen: there, you can click on the touchpad

Now the Share button is mapped to "Touchpad Click" (you can see it by hovering the share button, on the bottom list it should appear as "Share: Touchpad Click")

And voila, I hope it works for you too!

EDIT: Damn I just realized I necro-posted, but this thread was the first I found when googling for issue with Dualsense on Windows on POE2, sorry :x
