This has been discussed before.
What TV/Monitor do you use?

It seems to be related to one of the TV's settings.

Also, do you have Auto-HDR enabled in your xbox settings?

Why not use a different color for the completed ones? Seems like a simple QoL change to me.

Do you by any chance have auto-HDR on?

This seems like a display issue and not a game issue. For example, you can take a screenshot with your xbox, and then look at the image in your xbox app on your phone.

Would text be readable?
