RHEL, it's what I'm most familiar with anyway.

I use Kali Linux (formerly known as BackTrack) for a lot of classwork, and it seems to be pretty good. Kali is the distro that comes with a bunch of penetration testing tools installed. You can do some pretty wild stuff with it!
