Very high block if its not capped is best as you have no damage at all combine that with evasion and high ES and you dont need armor at all.
Also on a side note does armor/evasion/ES work the same for all characters and if so is there any reason beyond the small stat requirements not to choose gear based solely on mods that would be a lot easier than looking for so and so mods on witch cloth items for example. "Blue warrior shot the food"

Can you evade spells? Lol. Or is the only way to mitigate damage from spells through elemental resists?

There is a shield skill around the upper left part of the passive tree which gives you a chance to block spells with your shield. 12% of your normal shield block chance, but to block spells.

You can't evade spells, but you can manually dodge them if they are projectiles. If it hits your character model, it's a hit.

It really seems that having a high block is IMMENSELY useful. IMO Armor doesn't reduce enough damage. With the DR formula it's something like 1 point of damage being 40x more potent than 1 point of armor. Capping block and then going for elemental resists seems to be the way to go. Evade is nice but is affected by a monster's chance to hit. If you really want continuous damage reduction you might as well just invest in a strong endurance skill.
