what exactly is "Vsync"
I've noticed that disabling this option ingame brings about a significant increase in my FPS, but i don't actually have the faintest idea what it means.

it synchronises your frame rate to your refresh rate, and prevents "tearing" which is an effect where it looks like the image has a break in it.

Quick break down... you monitor puts information on the screen in a vertical (hence V) swipe. It takes time, but you really don't see it happening. That's called your refresh rate. Lets say it's 100 Hz (times per second). If your game is putting out 30 frames per second, that means that your screen is printing the same screen 3 times and even 4 times every third or so screen. It's out of sync with your game. That waste is lessened if you sync your game to your monitor's refresh rate.

The reason you notice major FPS decreases on high end machines when you enable Vsync is because it's capping your framerate (usually to 60fps, or 30fps if it can't manage that).
It's often beneficial when you can get away with it. Depending on your monitor's refresh rate, you're probably still only seeing 60fps anyway so there usually won't be a perceptible downside to having it on. It basically means that your GPU isn't wasting time drawing say frames that you won't see, which actually keeps your hardware temperatures down in addition to preventing the tearing artefacts Tabakki mentioned.
