Can you have one public tab with async trade and another tab without?

Yes.
"Normal" trade will still exist via public Premium Tabs. Async trade will be via new "Merchant's" Tabs. You will be able to have both if you want. - here's my sig

Caveat to the above. The Premium tab you are trying to convert must have been purchased before merchant tabs were available in the store. It is also very likely(unless they have fixed it) that not all of your historically purchased premium tabs will be available. I had three premium bundles worth when they first opened the ability to convert, it only showed 8 eligible to convert.
