I am not sure how tanky I should be in this new league as a Mercenary

I am on T11 maps, I have 80% evasion, I have second wind, and I have ALL my res at 75%. but i will still get one shot by the most basic mob and it doesn't feel like my evasion is useful, i don't understand what the point in evasion is, i have invested in it so heavily, but i cant dodge melee attacks and it seems anything that CAN get close WILL hit me and kill me, no matter what. I don't even know if its worth getting resistances, I was thinking I needed to have a balance of damage and defense but 100hrs into this league(which is a lot for me) and I can't get past level 81 because I die 3-4 times every map. Maybe my understanding of how defense works on each class works is misunderstood, but I thought each class was supposed to have their own thing and that's why they gutted energy shield for everyone but mages. In my mind 80% evasion with all res max should allow me to tank 1 to 2 shots, and see that if something is in my face it won't hit me. If it jumps, it hits me, if its fast, it hits me, if there are 15 dead body's on the ground and a mage blows one up it hits me, al of which kills me instantly I am giving up on this league, I am honestly not having fun anymore, the loot was one thing and they addressed it. But my fundamental misunderstanding of how a class with evasion is supposed to dodge attacks had brought me to this point where I have invested a lot of time into this character and I don't have the time nor the drive to go back and replay the ENTIRE campaign so I can play a meta build and have fun.

P.S if you guys could make some sort of video or guide explaining how each class is supposed to build defenses it would be great because as someone who is playing pretty casually I am at a loss for what I am supposed to do to survive anything.
