I just tried 2 uber labs. Both times, I crashed in Basilica Annex (about 3 rooms in, I think - after Sepulchre Passage?) after between a few seconds and about a minute.
AMD CPU and GPU (drivers up to date), Vulkan. As OP described, the trouble started after patching the game.
Before the crashes to desktop (in Sepulchre Passage?), I was getting something that may or may not be related: terrible temporary rubber banding, twice - once while opening a strongbox - BUT, there were no lag spikes. The ping display was constantly showing sub 30ms, at least.
Edit: By the way, I did multiple maps before this, and had no issues. I think it was Villa and Wastepool.
Edit 2: Just tried my luck again and was able to complete an uber lab. If there's another crash tonight, I'll update again.
Edit 3: Crashed again during Uber Lab, this time at Sanitorium Atrium.

Same for me except as the poster above it happens everywhere, even in hideout, and I came here hoping there would be something about it.
Things I have tried so far that did not work:
1. Deleted Cache and the documents folder and ran game with just the basic default loot filter.
2. Ran PackCheck.exe
3. Switched between DX11, Vulkan and DX12.
4. Checked my networking, ran test on speedtest.net trying out 3 different servers, got average ping 16 ms with 400 MB down and 20 MB up which is what my ISP provides me with, nice and stable, no dips.
5. Pleayed some Elden Ring and HZD, high graphics intensity, no problems.
6. Reset Winsock, updated drivers, checked all settings including networking.
7. Logged on to GW2 and played it for a while (its an online game), no problems.
So the issue is exclusive to PoE. The only thing that is unusual that I notice is that the sound is cutting off or stuttering during the crashes, but I don't know if the sound issue is caused by the crash, or is it causing or contributing to the crash.
Switched from speakers to headphones and switched sound channels to "low".
