He's wielding a sword and a staff there. Except -
1) That's a longsword, which is typically not meant to be a one-handed weapon.
2) He's not really wielding them both - he's using the sword (clumsily) as a weapon, but the staff as merely his walking stick i.e. for support.
3) Most martial arts eschew dual-wielding, which has always been more of a gaming invention than an actual combat style. There are a few exceptions (like below), but generally speaking fighting is best done either sword-and-board, or two-handed - with staves pretty much always being used as the latter. The power of dual wield in gaming is a meme.

Just use a long scepter and a foil.
But c'mon, you're no Gandalf.

There are also Parrying Daggers that were used in conjunction with rapiers for example.
I make dumb builds, therefore I am.

Yes, there's quite a few examples of that sort of dual-wielding, wherein the second weapon is mainly used for defensive rather than offensive purposes. Including specialized weapons made specifically for it, like your parrying daggers (especially since such weapons often tend to be much smaller than shields, which makes them more convenient to carry). Gaming never got that memo though - dual wield is typically treated as more of an offensive tool. Though it did absorb the ever-popular meme of the cool-looking Hollywood 'crossed swords' defensive move, which wasn't even how such weapons were used (actual combat - both armed and unarmed - is typically much faster than Hollywood ever shows, resulting in locked swords/sticks/whatever being a pretty dumb move).
