Honestly, I've had 7 year and 10 years that were better :P

I think overall, 6-8 years is the best age for a cheddar. You start to get the crystalized crunchies... you get the deeper flavor... and you typically avoid the problems associated with a long aging which can ruin your cheese.

The longer you go the higher the chance the cheese will turn on you and begin to rot. At 12 years I've tasted some that were clearly not good anymore. The other problem with older ones is that they are brought out of the cellar for purchase, but the high price forces them to sit on the shelf for longer than they should in an environment that is not conducive to aging anymore.... effectively ruining the cheese.

So at $15-40/lb, the younger ones are often a much better buy... and usually when you buy these the cheese dude will let you try it before you buy it, so you know you are buying something of high quality. Ideally you buy the one that tastes the best at the lowest price available.
