Someone who has been using win8 for years now (me), I actually find win10's UI very refreshing. Hell, most of the issues I had from win8 on my laptop (currently on my desktop) went away when I upgraded to win10. Very responsive, and has no issue multi-tasking. So far, I really like the change. Going to do more testing on my laptop before having my desktop upgrade to win10.
As for the default securities and private policy stuff, I think you can tweak those in the settings, but not sure to what extent since I have not gone too far into windows 10 since my focus has been, does my stuff work still? My first impression, I am sold on Windows 10 unlike Windows 8 or 8.1, which was like meh? Still, windows 7 is something I will remember for a long time, and as I use Windows 10 more, Windows 7 will be but a distant memory, just like how windows 7 was to windows XP. I just upgraded to w10 myself. Works fine once you install your drivers and get past the wrong resolution/shit not working bullshit.

" Running 7 and 8 on two separate computers, I'm with you. 7 is like a walk in the park but when I get on the other pc I find myself stumbling around with it's wonky features. It's like Micro$oft just said "lets take all the intuitive features and throw them away". Does PoE work with Linux yet? If so it's time to switch OS's :) Just a lowly standard player. May RNGesus be with you.
