Is 1H+Shield ST any viable[NEMESIS]?

Hi,

i played my ST 2H Scion till Dominus and died because i didnt get how his Bleeding works.
So i have to reroll.

Is a 1H ST more secure to play than a 2H? How is the Damage output?
Sword/Mace/Axe?
I would go MOM/EB then i dont know what i would take(IR?).
Or is 2H so much better that there is no way i should go 1H?
