Im from New Zealand (Australian realm)

Huh? Why am I getting lower ping on a server that is like 5x the distance away. I used to get 40-50 ping and now for about a week I've been on 200.

WinMTR while you play.

But the reasons for this could be many, and most of them are not server related.

For one, you are going to be using an undersea cable to get the connection from New Zealand to AU, that particular area is pretty bad for breaks in those cables, which then force the connections that use it round about to reach it's destination, that also congests the lines as the tens of thousands that the main one handles is handed off to other ones that are already being heavily used.
It could also be that they connection is being routed around a lot to try bypass the problem (adding latency)

Your trace shows it at hop 4 before it gets to the network layer.

WinMTR v0.92 GPL V2 by Appnor MSP - Fully Managed Hosting & Cloud Provider
I've raised this with our server provider to see if they can do anything.

It looks like the problem is being introduced with one of Vodafone's upstream providers, however.

i am no expert but this could be the reason why we have 200ms ping to Aus
https://www.radionz.co.nz/news/national/348471/construction-on-third-undersea-cable-begins

the signal is taking alternative long route to reach Aus while they are doing the upgrades
