It's about double the chance (we think, community understanding of how fusings work is not perfect) plus you have a chance to 6L instead. Don't try to 5L 5-socket items.

If links were rolled independently, the chance for 5L would be almost the same on 5S and 6S (two 5L possibilities, but also twice as many "fuck up" scenarios).
However it is common belief (or even confirmed?) that links are not rolled independently. Instead every socket, starting from the first, rolls for how many links will follow him. On a 5S item, you then get a 5L if and only if the first socket "decides" he is followed by 4 Links. I would also say, that the chance is doubled because with 6 Sockets you have 2 possible states with 5 linked sockets (No link followed by 5linked sockets and 5linked sockets followed by no link).
With 5 Sockets you only have 1 possible state with 5 linked sockets. “Demons run when a good man goes to war"
